Owned by Virginie and Niven van Bronckhorst-Kunz, the Michelin-starred and Green Star restaurant follows the 80/20 philosophy, placing vegetables at the heart of the plate and using animal products only as a complement. The kitchen works closely with local farmers and producers, drawing inspiration from their stories and seasonal ingredients such as tomatoes, peppers, radishes, strawberries and dairy from nearby pastures.
