At Hemel & Aarde, set within the historic Polmanshuis in the heart of Utrecht, dining becomes an intimate conversation with the seasons. Chef Rene van der Weijden and his team allow nature’s rhythm to guide their creations, placing forgotten vegetables, delicate fruits and foraged flavors at the center of the plate, while fish and meat take a gentle supporting role. Every dish celebrates Dutch terroir, drawing on gardens, castle grounds and the work of passionate farmers and artisans. Techniques such as fermentation and kōji add depth, extending the seasons and transforming ingredients into soulful expressions of flavor. The experience is thoughtfully completed by Marco Westra, and the wine pairings are curated by our sommeliers Sanne van den Brink and Marek Masse, who curate wine pairings that mirror the kitchen’s creativity and enhance every nuance.
