Restaurant Lille Mølle marks a new chapter in one of Copenhagen’s most historic buildings. Opening in October 2025, the restaurant is set within the listed mill on Christianshavns Vold – a landmark with roots dating back to 1669. Here, centuries of cultural heritage meet contemporary Nordic gastronomy in an intimate and characterful setting.
The mill has carried many lives through time, and Restaurant Lille Mølle brings new purpose to the house – not by repeating what has been, but by creating something distinctly its own. The kitchen follows the rhythm of the seasons and the landscape. Local ingredients shape the menu, which evolves naturally throughout the year. Much of the produce is harvested and processed in-house through fermenting, pickling and preserving – a modern continuation of the mill’s original role as a place where nature’s raw materials were refined with care and precision.
At the helm is chef Christoffer Sørensen, whose cooking is defined by technical clarity, respect for ingredients and a deep understanding of seasonality. Each dish is built to let flavours unfold with depth and balance, creating a menu that feels both contemporary and quietly rooted in tradition.
