The Sartory Restaurant ranks among the top culinary destinations in Augsburg’s city centre, elegantly bridging history with contemporary gourmet cuisine. Within the stylishly understated rooms of the storied Hotel Maximilian’s, a modern fine dining experience unfolds, one that consciously prioritises clarity, quality and precision.

Under the direction of head chef Simon Lang, the kitchen brings together classical French foundations with Mediterranean influences. Premium ingredients and a strong seasonal focus take centre stage, expressed through creative, finely balanced compositions. Dishes such as grilled black cod with green apple, veal sweetbreads and fermented shallots bear the kitchen’s unmistakable signature: technically accomplished, aromatically layered and thoughtfully modern in interpretation.

The restaurant was awarded a MICHELIN star in 2019 and accommodates around 30 guests. Diners may choose between the Menu du Chef and a vegetarian menu, each optionally paired with a carefully curated wine selection. A five-course tasting menu rounds out the offering, inviting guests on a journey of culinary discovery.

The Sartory is also steeped in history: named after Johann Georg Sartory, a distinguished Augsburg chef of the 19th century, the restaurant draws a line between tradition and the present day. A particular point of intrigue is the historic stove in the dining room, around which legend has it that Anton Fugger once burned the debt certificates of Emperor Charles V.
